Ingredients

Dough
  • 2 Cups warm water (105-115 Degrees)
  • 1 tbsp active dry yeast
  • 1/4 cup honey
  • 2 tsp salt
  • 2 tbsp cubed butter
  • 1 tbsp melted butter
  • 5 1/2 Cups bread flour
  • 2 tbsp olive oil

Instructions

To prepare the dough
  1. In a large bowl or mixer with paddle attachment, add warm water, yeast, and a drizzle of honey, Allow to rest for 5-10 minutes until mixture begins to bubble.
  2. Add remaining honey, salt, butter, and 3 cups flour. Mix to combine.
  3. Add another cup of flour and mix to combine. With mixer running, keep adding 1/2 cup of flour until dough begins to pull from the sides. Dough should be smooth and elastic, sticky but not too sticky. Add more flour if needed.
  4. Remove any stuck dough from paddle attachment and place back into the bowl. Change to your dough hook and knead dough for 4-5 minutes on medium speed, or 5-8 minutes using your hands.
  5. Remove dough from bowl and any stuck pieces from the dough hook and place on a lightly floured surface and kneed by hand a few more minutes.
First Rise
  1. Grease large bowl with olive oil and place dough in. Spreading oil all over dough lightly.
  2. Cover with a towel or plastic wrap.
  3. Place in a warm area (I found my oven works best with just the light on) for 1/5 hours.
2nd rise and bake
  1. Punch down dough in bowl and divide in half.
  2. Spray 2 9x5 bread pans generously with cooking spray.
  3. Add cut parchment paper to the bottom for easy removal after baking.
  4. Roll dough into logs and place into pans.
  5. Spray plastic wrap lightly and cover each bread dough.
  6. Place back in oven with only the light on for 45 Minutes to 1 hour or until bread has risen 1 inch over the bread pans.
  7. Remove dough from oven.
  8. Preheat oven to 350. Add dough back to oven and bake for 30 to 33 minutes.
  9. Remove Bread from oven, remove from pans and place on cooling rack.
  10. Brush tops of bread with melted butter.
  11. Let bread cool completely before slicing.
  12. Store in air-tight container.
